  • soy sauce
  • lemon juice
  • hot sauce
  • 2 eggs
  • 1 ramen brick (flavor irrelevant)
  • 1 stick of celery
  • green onions
  • oil

  1. Start heating the water for the ramen brick.
  2. Cut the celery and green onions. You can just chop up the green onions however, but I recommend slicing the celery diagonally as they do at Exotic Thai; it's much prettier and produces pieces with better texture.
  3. Put in the ramen brick; after a few minutes pull out the noodles and drain. Be sure not to overcook.

  4. Fry the eggs in the wok over medium heat -- use the burner still warm from the noodles.
  5. Turn up the heat to med-med-high. Add noodles, hot sauce, soy sauce, lemon juice, and green onions to the wok and stir-fry.
  6. Add celery, stir-fry a little more. We add it late to avoid getting it too cooked.
  7. Consume.
