Delicious thinly sliced fried potatoes with crunchy edges and soft centers.

  • 2 Red potatoes
  • Canola oil
  • Salt
  • Chili powder (optional)

Makes enough potatoes for one person.

  1. Slice the potatoes thinly. (You may also want to remove the skins if you don't like how they taste.)
  2. Microwave the potatoes for 2 minutes to remove some of the water. Use a bowl with plastic wrap over the top (leaving a hole for ventilation).

  3. As the potatoes microwave, put your frying pan on the stove at almost-medium heat. Use the largest pan you have or you'll end up doing a painful number of batches. The pseudo-wok in the pictures is not an ideal cooking instrument.
  4. Fry the potatoes. Use lots of oil and watch them carefully—they can burn quickly! If using chili powder, sprinkle it on generously.
  5. Salt generously. Put the shaker you stole from the ARA to good use!
  6. Consume while still warm.
